Blueberry Compote with Fresh Blueberries

Blueberry compote is a delicious, jammy fruit topping for waffles and more!

Ingredients
  

  • 2 cups fresh blueberries
  • 1/4 cup white sugar or swap in brown sugar or maple syrup for extra flavor
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice or add a bit of lemon zest

Instructions
 

Combine all ingredients in a small saucepan or small pot

  • Add the fresh berries, sugar, tablespoons of water, and tart lemon juice.
  • If you like, add a splash of vanilla extract for depth.

Bring to a simmer over medium heat

  • Stir gently with a wooden spoon to dissolve the sugar.

Simmer for 15 minutes, stirring occasionally

  • The cooking process will soften the berries and release their juices.
  • Use a potato masher to gently mash some of the berries, leaving others whole for texture.

Remove from heat and let cool

  • The compote will thicken slightly as it cools. You can serve it warm or let it come to room temperature.
